This recipe is in honor of my daughter Hadas who will be getting married in a few weeks to the best son-in-law to be I have ever met--Max Glaser. Apparently he loves these little chocolate delights and we are finding them to be a lovely treat for us as well. This recipe comes from a website called runonveg.com and only has 6 ingredients. You do really need a food processor and a freezer but they come out great and one or two after dinner can certainly be a nice light chocolate dessert with a cup of tea.
Here you go 6 ingredient raw candy bar:
1 cup of raw almonds
1 cup of dates
1 teaspoon of vanilla
put these three ingredients in a food processor until it gels together into what appears to be a ball of dough.
Take it out and put it on a piece of parchment paper in a baking sheet. The recipe suggests that you spread the dough and make this layer thick. I wanted to have more pieces of the final product so I placed another piece of parchment paper on top and rolled it with a rolling pin to make it a pretty thin layer.
For the middle layer mix together
1 Tablespoon of nut butter
1 Tablespoon of organic coconut oil
1/4 cup of chopped almonds.
You can melt the coconut oil or you can just stir it and it melts and then add the nut butter and chopped almonds and spread this over the first layer.
Place the pan in the freezer for 20 minutes for the first two layers to set.
The top layer of chocolate
3 Tablespoons of organic coconut oil
2 Tablespoons of raw Cocao (I used Hershey's special dark chocolate)
1 Tablespoon of nut butter
Mix this all together. Again you can melt the oil or just stir it. Spread this layer over the top and slice into pieces and return to the freezer for 2 hours. After this you can put the chocolate date bars into an airtight container but you need to leave them in the freezer until you serve them. They will be soft enough to bite straight out of the freezer but left at room temperature they will melt.
