I wonder how many times over the years this has been said to me. Apparently I seem like one of the flower children of the 1960's. As I was born in 1959, I was aware of things happening around me--a war in Viet Nam, protests about civil rights, assassinations and moon landings--but I was just a bit too young to be a real hippie. Eventually I spent most of my 20's and early 30's on a Kibbutz with a large number of previous hippies, so maybe some of that aura rubbed off on me. Perhaps it was getting married in a cotton dress with a flower crown. I am not sure what it was but over the years people have assumed that I make all sorts of things myself, and for some reason granola is the top of the list. Those who know me well know that my life has generally been crazy busy with little time for projects like granola.
That all changed 2 weeks ago with my new toy! I finally made granola. I thought--fabulous, now when someone says "I bet you make your own granola" I can say "why yes I do!" Much to my surprise, the response to "I made granola in my slow cooker"--was "you didn't make it in the slow cooker!" or "how can you make granola in a slow cooker?". I didn't see that coming!
Well I am here to tell you that yes you can make lovely granola in the slow cooker. You just have to make it with the lid off and stir it now and then. It is so fresh and delicious that I have to make it every Sunday, because we can eat it all in a week. The other good news is that my much maligned old giant slow cooker that burns everything does a great job on the granola, leaving me room in my new one for other experiments.
This week my new slow cooker trials included lentil chili--amazing with steamed rice and a few cashews on top to give it a bit of a crunch. Moroccan white bean soup- yum (though I added my own touch to this recipe and blended part of it giving it a little thicker texture and not so many beans to physically eat) and I made the vegetable tian again because I can't seem to go a week without it. This time I topped it with toasted breadcrumbs and pine nuts.
Some people have asked me to put up recipes here and I don't want to get into copyright trouble so I am just going to post my experiences with the cookbook and if you find it interesting you can order it on amazon for $14 (9.99 for the kindle edition).
